Recipe Overview

This whole wheat cranberry bread is made with whole wheat flour, bread flour, sourdough starter, and dried cranberries. It has a rich grain aroma with a sweet and slightly tart cranberry flavor. The key steps are mixing all ingredients except salt and butter first, then adding the salt and butter, followed by the dried cranberries. Ingredients

Whole wheat flour: 2.1 oz
Bread flour: 12 oz
Sourdough starter: 3.5 oz
Salt: 1 tsp
Cake yeast: 0.5 oz
Water: 7.4 oz
Sugar: 1.4 oz
Milk powder: 1.1 oz
Butter: 1.3 oz
Dried cranberries: 2.8 oz

Instructions

  1. Mix all ingredients except salt and butter in a dough maker for 15 minutes.

  2. Add salt and butter when 6 minutes remain.

  3. Add dried cranberries and knead for 5 minutes.

  4. Ferment for 60 minutes.

  5. Divide the dough into 6 equal portions, round each portion, and rest for 15 minutes.

  6. Roll out the dough with the top thicker and the bottom thinner, then roll it up and seal the seam.

  7. Proof in the oven at 95°F for 1 hour.

  8. Score the surface and pipe in softened butter.

  9. Preheat the oven to 392°F, then place the dough into the oven to bake.
